By now all of us would have got over the intensity of Christmas, had a short break away from the heat of the kitchen, consumed vast quantities of Brown Valium (beer!) and bracing ourselves for the challenges of the forthcoming year – Welcome to the real world! A full agenda for the year ahead is before us – the 28th World Congress in Melbourne, the different food shows up and down the country as well as those overseas to name just a few items.
There are also some exciting developments that will benefit our members and the Chefs Association that will, with your support, put the Association in a healthy situation – more on this later. 1998 is now well under way – I hope that whatever you are involved in is a great success. Murray M Dick
NZ CULINARY FARE - SALON DIRECTOR Martin Harrap has been appointed as this year’s Culinary Fare Director for the National Culinary competitions to be held in Auckland 16 – 18 August 1998. There has been a great deal of hard work put in behind the scenes to revamp some of the classes and the restaurant competition which will include a secondary school’s class as well as a Veteran’s Class (for the over 40’s).
The Foodservice Show is organised by FANZ and XPO Exhibitions and the Culinary Fare is a part of the whole event. Key people from the FANZ office have recently left, but I am sure Kim and Barbara’s replacements will do a great job. MEMBERSHIP CARDS
I am pleased to advise you that we have finally had our membership card printed for the New Zealand Chefs Association. All financial members will receive the card with expires on 31st May 1998. We hope that the card will allow branches to obtain special deals from your local suppliers as you will be able to provide proof that you’re a financial member of the Association. Naturally the National Office is working on other deals similar to the fuel
card programme (have you joined the scheme yet – are you now making savings every time you purchase petrol?). If you have not yet paid your annual subscription, please forward a cheque to the Administration & Finance Director, Keith Clark, or phone him on (09) 262-8828 to confirm your status. Internet Marketing. His team continually updates the site with news we provide. For visitors to the site, members and guests have a couple of areas to return mail to us. The first is our e-mail address sayhi@chefs.co.nz. The other is through the membership application form on the site.
If somebody completes either area the message automatically ends up on my pc at home, which I clear daily and respond back. Currently we receive 3 or 4 e-mails a week from all round the world. I have communicated with the Northern Ireland Chefs Association, CFA in Malta (WACS member for Malta) Japan with Joe Mcleod – an overseas member from Wellington Branch, as well as people in Asia and the US. Through the contact, we are passing on copies of the Stockpot overseas
and receiving news in return. I will be hosting a Chef Tutor and Professor from the Culinary School in St Louis in the States. Furthermore I have assisted the Executive Chef and his partner (a food stylist) from Tyson Foods in Chicago with a month long holiday in New Zealand. I have received e-mail from a group called chefswives@usa.net. This website is for the wives of chefs who are left at home while hubby works. Perhaps an interesting site for your partner to visit while you stand over the oven (what is there for the partners of female chefs I wonder? – Clare). We are currently working on a few projects to raise our profile but in the meantime – visit our site. Keith KINGFISHER SCHOLARSHIP This very successful Scholarship is still being supported by Kingfisher Products. There was some confusion last year as a statement was made
that the Scholarship would no longer be funded by Kingfisher. However, the director of the company recognised the benefits of the ongoing support and, on an albeit much reduced scale, has confirmed the continued support.As from this year, the Scholarship will change its name to the New Zealand Chefs Scholarship in association with as many companies as we can get on board to help support this magnificent opportunity for up and coming chefs.
Last year four lucky recipients made the grade, even though not as many entries were received. The winners were: - Alice Au Yeung - Auckland

CONGRATULATIONS Poppa and Nan Hawkes (alias Graham and Glenys) have become grandparents. Congratulations to the proud parents Jeremy and Kaiko Hawkes – a baby boy Thomas Hawkes, born 5th February 1998 at 11.10 pm, weighing in at 3.5 kg (? Lbs for those of us who are still un-metricated as far as babies are concerned).
Thomas was born in Fukuoka in Japan and all are doing well. Needless to say that the amount of celebrations that have taken place in wetting the babies head have been continuous from 5th February to the extent that the child’s head could be described as drowned. 28th WORLD CONGRESS – MELBOURNE
New Zealand is well represented at the forthcoming World Congress in Melbourne – as far as we are aware there are at least 40 delegates from NZ attending with a good representation from Southland. The conference is being held between 15 and 19 March with lots of discussion groups and culinary competitions. We are very pleased to have representing New Zealand, Greg Heffernan who will give a talk and demonstrate
Pacific Rim Fusion under the programme called Cuisines of the World. This should be an exciting programme to watch as there are 60 member countries of WACS and we believe there are 39 countries being represented.The other exciting programme of culinary competitions is represented by Michael James of Essence Restaurant in Auckland. One representative from each country will prepare two main courses using beef or chicken
and two different sweet courses all within a 90 minute time frame. New Zealand Chefs Association’s Ambassador, Murray Dick, will give a speech on Tuesday 17th, and a presentation to the Continental Directors of WACS will be given by Martin Harrap, National President. We have organised a Maori influence in our presentation that I am sure will evoke some excitement and professionalism. The next issue of Stockpot will have full coverage of events.
MICHAEL JAMES – New Zealand Chefs Association Representative Michael has been chosen to represent all chefs and cooks throughout New Zealand. This awesome responsibility has been accepted with a great deal of pride from Michael and we all feel very confident that Michael will give it his very best. The menu that Michael is preparing and photos will be in the next issue. I am sure we all wish Michael all the very best and a successful outcome.
AGM This year’s AGM will be hosted by the Wellington Branch. Due to the WACS Congress in Melbourne this year, it was decided at the last AGM to keep the 1998 event as a one-day affair. The AGM will take place on 4th July. It is planned that the Executive will meet in the morning and hold the AGM in the afternoon with a dinner in
the evening. Sunday morning could be an organised tour of Te Papa. More details will come to hand during the next few months |
